Cauliflower Crust Pizza

I made a cauliflower crust pizza the other day. It's been on my mental list of recipes to try for a long time, so I'm glad to have finally gotten around to it! I neglected to take into account the fact that my oven tends to cook a little fast, so it came out slightly overdone, but it tasted fantastic anyway. So if you're looking for a healthy alternative for pizza, try this out!

Ingredients:

1 cup cooked, riced cauliflower
1 cup shredded mozzarella cheese
1 egg, beaten
1 tsp dried oregano
1/2 tsp crushed garlic
1/2 tsp garlic salt
olive oil (optional)
pizza sauce, shredded cheese and your choice of toppings*

Directions:

1. Rice the cauliflower. Break it into small pieces and put it through a food processor until is broken into a grain-like consistency. 
2. Place in a microwave safe bowl and heat for 8 minutes, until cooked. No need to add any water!
3. Mix together the cauliflower, egg, and mozzarella. Add oregano, garlic, and salt, and stir. 
4. Pat out into a 9" round on a non-stick sprayed cookie sheet. 
5. Bake at 450 degrees for 15 minutes.
6. Take out and add sauce, toppings and cheese. Place in broiler for a few minutes, until cheese is melted. (Toppings may need to be pre-cooked if a few minutes in the broiler won't be adequate cooking time).

Notes: I didn't have garlic salt, so I just used regular table salt. I also added some ground flax seed to the crust recipe. For toppings I used some tomato, spinach, and Parmesan over top of mozzarella cheese.
